Refurbishment at Mercure Bristol Holland House Hotel inspired by city’s industrial past

Bristol’s Mercure Holland House has launched its new bar and kitchen concept – which draws on the city’s rich industrial and maritime heritage – with a VIP reception.

Among the guests at last night’s event at the Urban bar and kitchen was the Lord Mayor of Bristol, Cllr Claire Campion-Smith, who was greeted by general manager Alan Bickerton and his staff.

The refurbishment has transformed the former lounge and bar area in the 275-room hotel into a tranquil and relaxed public space which opens up views over the previously hidden green courtyard, home to one of the oldest listed London Plane trees in the city.

The hotel’s public spaces have been re-designed for lounging, meeting, working, drinking and dining. Intimate seating areas combine sizeable booths and banquettes, sofas and chairs – all of which are placed alongside the more traditional dining area restaurant seating.

The design features industrial and iron works alongside softer tones, warm colours and splashes of vibrant upholstery fabrics. There are visual references to the engineering works of Isambard Kingdom Brunel and textures and patterns inspired by the Clifton Bridge.

The interior of the hotel is staying true to its locally inspired roots and is displaying wall art from local artist Ellie Hookham, while head chef Brijesh Khanna has created a menu that embraces Bristol’s nationally and internationally recognised status as a food capital. Working with local suppliers wherever possible Brijesh and his team are committed to offering a menu that is both globally and locally inspired and acknowledges the city’s commitment to diversity.
