Innovative brewery brings new flavour to Bristol’s Wapping Wharf food and drink quarter

Somerset brewery Wild Beer Co has become the latest business to open at Bristol’s cutting-edge Wapping Wharf food and drink hub.

The firm’s new restaurant offers craft beers and ‘new school’ fish and chips in a light and spacious modern setting on the Harbourside alongside some of the city’s best independent and most innovative food and drink outlets. 

Wild Beer Co, which describes Bristol as its spiritual home, was keen to secure a base in the city’s emerging foodie quarter that developer Umberslade is creating at Wapping Wharf.

Wild Beer Co, with its strapline ‘Drink Wildly Different’, was set up by Andrew Cooper and Brett Ellis on a farm near Evercreech in Somerset in 2012.

Since then it has grown rapidly through its creative take on a traditional South West industry and its disruption of the brewing status quo, with a range of distinctive beers conceived specifically to accompany food.

This emphasis reflects both co-founders’ culinary background and explains their focus on restaurants rather than bars.

The firm’s Bristol restaurant complements its existing outlet in a Georgian town house in Cheltenham as well as its fast-growing retail operation.

Andrew Cooper said: “We are delighted to establish our Bristol home in such a prestigious and attractive spot. For a proudly West Country brewery with wider ambitions, Wapping Wharf gives us an ideal base in the region’s capital city and of course Wild Beer brings its own unique flavour to this young neighbourhood.”

The outlet stocks 22 draft beers and many bottles and cans from Wild Beer Co and some of its favourite breweries in the UK and abroad.

The menu at Wapping Wharf is the fruit of Wild Beer Co’s collaboration with North London restaurateurs Hook. 

Hook is re-imagining the most classic English dish of all – fish and chips. Its flagship Camden restaurant won praise from Time Out, The Huffington Post and The Evening Standard and was voted best restaurant in Camden in 2015 by the public in a Time Out survey.

Wild Beer Co combines pride in its west country roots with large aspirations and has appointed likeminded local partners to help realise its ambitious vision.

The company uses Bristol and London lawyers Temple Bright, an innovative firm best known for its work with tech start-ups wishing to scale up quickly and achieve global reach.

The Wapping Wharf development includes 600 new homes alongside independent restaurants, shops and cafes.
